Low-Spoon “Feels Fancy” Mexican Burrito Bowl
INGREDIENTS NEEDED (per person)
4oz ground beef
1/4 cup Refried Black Beans
1/4 avocado sliced
5 Cherry Tomatoes, sliced
1oz Pepper Jack Cheese, shredded
Green onions, sliced
Extra Virgin Olive Oil & Cilantro for drizzling
SEASON TO TASTE:
Chili Powder
Cumin Powder
Garlic Salt
Garlic Powder
Onion Powder
Paprika
Salt & pepper
Low-Carb “Feels Fancy” Mexican Burrito Bowl
Serves 1 person but you can adjust it to fit your needs
In a saute pan over medium-high heat, add your ground beef & seasonings, and cook til brown, season to taste
Meanwhile, cut your tomatoes, shred your pepper jack cheese & slice your avocado (which can be done ahead of time)
In a small food processor, add cilantro & a few tablespoons of good quality extra virgin EVOO & mix together as your cilantro oil to drizzle on top (it made this feel fancier than it was). You can also just use a knife & cut your cilantro then drizzle the olive oil.
To plate: put your warmed (in the microwave) refried beans on the bottom, next ground meat, and top with cheese (could be DF if you prefer), then avocado, cherry tomatoes, green onions & cilantro oil.
This is a great comforting low-energy meal for a weeknight.
